This class concentrates on the processes involved with taking in and utilizing food substances by which growth, repair and maintenance of activities in the body are accomplished. This includes ingestion, digestion, absorption and metabolism, as well as, basic nutritional needs and the use of vitamins, minerals and supplements. The course builds on prior bioscience classes to focus on biomedical nutrition and food therapy. Carbohydrate, lipid and protein (macronutrient) requirements needed to maintain health at different stages of life is covered. The course moves on to cover the topics of vitamins and minerals (micronutrients), and indirect calorimetry / measurement data related to caloric intake. There is a comparison of Chinese and Western principles of nutrition, diet and food therapy
